Were or are 1911's in .45 ACP meant to shoot non-hollow point rounds?

The 1911 and it's predecessor the 1905 were both made to use FMJ cartridge. They were the most common semi auto cartridge back in those days. Kimber as well as other manufactures recommend you use FMJ cartridges in their firearms to insure proper feeding. Hollow points of old could and would cause feeding problems. Modern .45 ACP hollow points are made to feed in most .45 ACP handguns. As with any ammunition firearm combination you should use them in your firearm before depending your life on them.
